I'm not a huge rock fan, but there are a few classic rock bands that are cool. And there are about 5-6 prog rock bands that I think are awesome. Porcupine Tree, Dredg, Dream Theater, The Mars Volta and a couple of others I'm too tired to think of right now.

What's the difference between rock and metal? There are plenty of songs I'd definitely describe as metal, and plenty I'd call rock without a second though. But what's the boundary?

Well, I think you'll get different responses, but for me the difference is mostly in the lyrics, which are typically darker in metal, and the drums and bass, which are more prominent in metal. That's a rather simplistic response, but it's a summary of the the two main factors I use when deciding whether a song is metal or rock.

Metal is technically a subgenre of Rock. While its all rock, there are a variety. That is my opinion.

Don't really listen to much 90s or later rock, except for bands that started earlier and carried over. I'm particularly fond of Styx.
